Here comes another Christmas breakfast that’s full of tradition and childhood memories: Tourtière. It’s a delicious pie filled with rich, spicy, and meaty goodness. Not to forget its rich roots in Quebec. So, here’s to a traditional recipe!
Ingredients
You will need to prepare the pie dough and pie filling separately.
For the dough:
- 300g flour
- 160g Unsalted butter
- Salt
- 6 tbsp ice cold water.
- One egg
For the Filling:
- 500g pork mince
- 500g beef mince
- 150g diced onion
- 100g diced celery
- 350g potato
- 3 cloves of diced garlic
- 0.5 tsp ground allspice
- 0.5 tsp ground cinnamon
- 0.25 tsp ground nutmeg
- 0.5 tsp ground black pepper
- 200ml chicken stock
- 2 tbsp olive oil.
Instructions
The recipe will follow: Preparation of pastry (dough), preparation of the filling, assembly, and baking.
Put potatoes to a boil before you start the recipe to quicken up the process.
1. Prepare the pastry: Add flour, butter, and a pinch of salt to a food processor. Pulse until the butter is mixed into the flour.
2. Slowly add cold water until the dough starts to form into a loose ball. (Once cluttered, you can make dough it with your hands)
3. Once the dough is prepared, gather it into a disk, wrap it in a cling film, and refrigerate for about an hour to let it rest.
4. Prepare the filling: Peel boiled potatoes. Drain and mash them roughly once cooked.
5. Meanwhile, heat olive oil in a large frying pan over high heat. Saute onions and celery for 3-4 minutes, then add the pork and beef. Season with salt and spices, cooking for about 5-6 minutes. Add chicken stock and let the mixture cook for another 15 minutes.
6. Stir frequently, and ensure it’s not too watery.
7. Add mashed potatoes, mix, and take the pan off the heat. Let it cool.
8. Assemble the pie: Cut the dough in half. Roll out one half to fit a 25 cm (9.8”) pie tin.
9. Line the pie tin with the dough and fill it with the cooled meat mixture. Remember, adding hot filling may stop your pie from getting a crispy edge. So, always cool.
10. Roll out the other dough and place it on top of the pie (like a covering sheet). Crimp the edges and cut a small hole in the center to let the steam escape. Because it’s Christmas, why not cut it in a star shape?

Ingredients:
Cinnamon rolls are the perfect dessert for a cold Christmas morning. What takes the whole recipe to the next level is adding eggnog to both the dough and the glaze.
It’s even better if you have some leftover eggnog from the batch you prepared with our first recipe.
For the dough:
- 360g all-purpose flour
- 7g of instant yeast
- 50g sugar
- ½ tsp salt
- 180ml eggnog
- 42g melted butter
- One large egg
For the filling:
- 75g softened butter
- 100g brown sugar
- 2 tsp ground cinnamon
For The Eggnog glaze
- 120g powdered sugar
- 30ml eggnog
- ½ tsp vanilla extract
- A pinch of ground cinnamon
Instructions
1. Make the dough: In a large bowl, combine one cup of flour, yeast, sugar, and salt. Add the warm eggnog, melted butter, and egg. Mix until smooth. Gradually add the remaining flour, a little at a time, until a soft dough forms.
2. Knead the dough: On a floured surface, knead it for 5-7 minutes until it becomes smooth and elastic. Place it in a greased bowl, cover it, and let it rise in a warm place for about one hour or until doubled in size.
3. Roll the dough: After the dough has risen, punch it down and roll it out into a rectangle (About 15×9”)
4. The filling: Smear softened butter all over the flattened dough. Now, spread brown sugar and cinnamon, and cover every inch of the flattened dough.
5. Roll the flattened dough: Roll the dough up tightly (you want to start horizontally- longer side)
6. Cut the rolls: Slice them into 12 even pieces. Place the rolls in a greased baking dish. Cover and let them rise for another 30 minutes.
5. Bake the rolls: Preheat the oven to 350 degrees. Bake the rolls for 20-25 minutes until golden brown.
6. Make the glaze while your rolls are being baked: Mix powdered sugar, eggnog, vanilla, and cinnamon to form a smooth glaze.
7. Glaze and serve: Once the rolls are baked, drizzle the eggnog glaze on top and enjoy with your morning coffee!

Originally, eggnog’s roots trace back to medieval Britain. Over time, it traveled all the way to the American colonies, given a touch of rum/bourbon/brandy, and it soon became a holiday staple.
Eggnog gained popularity around Christmas because of the many indulgent ingredients used in the beverage that were often reserved for special occasions. In very little time, the beverage became a holiday tradition.
Let’s continue that Christmas tradition this year as well, yes? The boozy eggnog is for you, but you can also prepare eggnog without the booze for the kids.
Ingredients:
Eggnog actually requires simple ingredients unless you are adding alcohol.
- 6 eggs (You will need to separate egg white and egg yolk)
- 200 grams of granulated sugar.
- 1 cup heavy cream
- 1-2 cup milk (Depends on whether you want a thick or watery eggnog)
- Nutmeg
- Cinnamon
- Clove (Optional)
- Booze of your taste. Usually, rum, brandy, or bourbon is used.
Instructions:
It’s best if you prepare the recipe one day prior to Christmas because it does need 2+ hours in the refrigerator.
1. You want to start by separating egg yolks from egg whites. It’s best to separate the egg yolk into one container and then transfer it to a safer ball to avoid breakage.
2. Set aside egg white, we’ll need it later.
3. Add granulated sugar into the egg yolk bowl, and start whisking them together. Whisk until the paste is nice and creamy, and pale yellow.
4. Set the bowl aside.
5. Here comes the best part— adding the milky and creamy goodness. In a thick-walled pot, add one cup of cream and one cup of milk. You can also add two cups of milk if you don’t want too thick of a consistency.
Note: Add one cup initially (in this step), and keep another cup of milk for later.
6. Here goes the spices. Grate a generous amount of (¼ teaspoon) nutmeg. (You can also add pre-grated nutmeg, but it’s best to use it fresh. Freshly grated nutmeg adds a citrus aroma to your recipe). You can also add grated clove and cinnamon here.
7. Give it a stir, and put it on medium flame.
8. Whisk the liquid continuously. You don’t want it to get burnt. The goal is to bring the milk to a simmer (not boiling). Use a thermometer if you are unsure. You want to score 160 degrees.
9. Once done, remove the pot from the flame.
Note: Don’t directly pour the egg yolk into the milk. The heat will curdle your eggs, and that will ruin your recipe. You want a custard-like consistency, not scrambled eggs.
10. Take one cup of heated milk, and slowly add it to the whisked egg yolk. Simultaneously, whisk the egg yolk while adding the milk. It will bring the egg yolk back to a fluid consistency.
11. Now, slowly pour the egg yolk into the milk. Don’t forget to whisk vigorously otherwise it will curdle.
12. Once done, put the mixture on a medium flame. Whisk until you get a thick consistency. The goal is custard-like consistency.
13. Tip it out in a bowl with a sieve. You will have a little residue, it’s inevitable. Whisk as much as you can and dump the remaining curdle.
14. It’s time for some booze. You can split the eggnog in two batches if you have kids at home. For half the batch, ½ cup of your favorite liquor is the minimum requirement. You can increase more if you’d like.
15. Eggning needs at least 3 hours in the fridge. So, it’s best to prepare it one day before Christmas.
16. Adding meringue is optional, but it will give you a thicker consistency if you’d like. (But do it before serving or it will flatten out)
Your eggnog is ready! Sprinkle cinnamon, add a cinnamon stick and it’s ready to serve.
